Royal Icing (Recipe 1)

Ingredients:

540grams Icing sugar (sifted)

2 egg whites

1/2 tsp lemon juice

Method:

1. Place the sifted icing sugar into a clean mixing bowl.

2. Add the egg whites one and mix the mixture until stiff peaks are formed.

3. Add the lemon juice. Mix thoroughly.

Please note: When the royal icing mixture is not in use, cover the bowl with a damp cloth to prevent crust from forming.
